A fool as a dessert is one of the simplest to make, swirling a fruit purée together with freshly-whipped cream, making it so easy, "even a fool could do it". This recipe takes the simplicity of a fool and combines it with toasted cake "croutons" to make a layered parfait, perfect for showcasing the tangy freshness of rhubarb at the peak of its very short season.. Step one - Rhubarb Purée 4 cups fresh rhubarb, chopped 2 cups water 3/4 cup granulated sugar 1 tsp. vanilla Combine all the ingredients in a medium saucepan. Bring to a boil over medium heat, then reduce heat and simmer for 20-25 minutes, until the rhubarb is super soft and falling apart. Using a hand blender, purée the rhubarb until smooth. Cooking Session #40 - Tabouleh with Grilled Halloumi

Cauliflower Tabouleh with Hot Honey-Marinated Halloumi Cheese Step one - Marinate the Halloumi Cheese : 400 g package Halloumi cheese 3 tablespoons honey 3 tablespoons lemon juice 1 teaspoon chili flakes 1 teaspoon fresh thyme pinch of salt Make marinade : Mix together the honey, lemon juice, chili flakes, thyme and salt in a resealable plastic bag.
