Cooking Session # 34 - Chocolate Zucchini Cake

(pour la recette en français, cliquer ici. ) 3 eggs 1 cup butter, softened 1 1/2 cup brown sugar 1 teaspoon vanilla extract 2 cups grated zucchini 2 cups flour 1/4 cup cocoa powder 2 teaspoons baking soda 1/4 teaspoon baking powder 1 teaspoon salt 1 tablespoon ground cinnamon 1 cup chocolate chips (optional) Preheat oven to 350°F. Grease and flour two 8-inch round cake pans. Set aside. In the bowl of an electric mixer, cream together the butter and brown sugar until fluffy. Add in the eggs one at a time, mixing well after each addition, followed by the vanilla extract. Beat until thick and lemon-coloured. Beat in the grated zucchini. In a second bowl, combine the flour, cocoa powder, baking soda, baking powder, salt and cinnamon. Sift the dry mixture into the mixer bowl with the creamed butter mixture, and beat until well combined. If adding, stir in the chocolate chips.
